December 2000, SIPS Bar is a fact. After 12 years at sea, Manuel’s dream becomes reality. In the South of Antwerp, in the shadow of the Waterpoort, he opens — without any form of publicity — an exclusive cocktail bar. ‘Sips’ refers to the careful sipping, tasting of an extraordinary drink. Within a few months, SIPS has grown into a unique business, where service, quality and the use of ‘Premium Labels’ are absolute priorities. Manuel prepares a thousand cocktails from memory according to the original recipe. Recipes go back to 1790…It should therefore not surprise us that a demanding clientele from both home and abroad quickly find their way to this exceptional bar.
